Panko & Parmesan Tilapia

  • Hi sweet friends!  The boys and I had a busy week full of sprinklers, play-dates, gardening, fun in the sun and lots and LOTS of bike rides!  They are both really into their bikes right now and Brian made them a chalk race-track to add to the fun!  Needless to say, they’ve been having a blast in our driveway!  The time got away from me this week and I found myself making dinner on the fly; this tilapia dish being one of them!  I made it up as I stood in the kitchen and it was full of flavor and took no longer than 30 minutes to serve a hot, home cooked meal.  The boys loved it and I think its definitely worthy of sharing!

    Ingredients

    4-6 Tilapia Fillets

    Lemon Juice

    1 tsp. Minced Garlic for each fillet

    Plain Panko Breadcrumbs

    Onion Powder

    Parmesan Cheese

    Parsley (Sub: Basil OR Italian Seasoning)

    2 Tbsp. Unsalted Butter

    S&P (to your liking)

    Directions

    Spray a 9×13 baking dish with Pam then place tilapia fillets in dish.

    Squeeze lemon juice over fillets then sprinkle minced garlic over each fillet.

    In separate bowl, mix together a handful of panko breadcrumbs, as much parmesan cheese as you like and 1/2 tsp onion powder.  Top each fillet with the mixture, pressing it down as you go.

    Put a few mini dollops of butter over the fillets and finish by shaking a little S&P and parsley on top!  *If you want, you can also sub basil OR Italian Seasoning instead of the parsley.

    Cover with foil & bake for 15-20 until fish pulls apart with a fork.

    Uncover and broil for 2-3 minutes so the tops turn golden brown.

    Serve with Rice Pilaf & Steamed Green Beans (and more parmesan on the green beans too!)
